Turkish Inspire Chicken Salad

This delicious healthy salad is packed with complex carbohydrates, protein, B vitamins and antioxidants, it doesn’t get any better really.

Ingredients
  

  • 1 cup cooked quinoa
  • 1/3 cup chopped coriander
  • 2 tbsp. olive oil
  • half lime finely chopped
  • 2 chicken breasts shredded
  • 1/2 red onion sliced
  • 1/4 flaked almonds toasted
  • 1/2 pomegranate seeds remove
  • 1/2 cup Greek yogurt optional
  • 1/3 cup figgs chopped

Instructions
 

  • Cook quinoa (rice cooker works well) and set aside to cool
  • In a large bowl combine quinoa, coriander, oil and lime, mix well and season to taste
  • Add chicken, onion, figs, almonds and pomegranate seeds, toss well
  • Serve topped with Greek yogurt (optional)
