Turkish Inspire Chicken Salad
This delicious healthy salad is packed with complex carbohydrates, protein, B vitamins and antioxidants, it doesn’t get any better really.
- 1 cup cooked quinoa
- 1/3 cup chopped coriander
- 2 tbsp. olive oil
- half lime finely chopped
- 2 chicken breasts shredded
- 1/2 red onion sliced
- 1/4 flaked almonds toasted
- 1/2 pomegranate seeds remove
- 1/2 cup Greek yogurt optional
- 1/3 cup figgs chopped
Cook quinoa (rice cooker works well) and set aside to cool
In a large bowl combine quinoa, coriander, oil and lime, mix well and season to taste
Add chicken, onion, figs, almonds and pomegranate seeds, toss well
Serve topped with Greek yogurt (optional)
