Salmon Cauli Mash and Steamed Greens

This recipe is simply protein, veggies and healthy fat, made with love. Oh and did I say delicious!!!

Ingredients
  

  • 2 salmon filets
  • 1 bunch broccolini washed ends removed
  • 1 bunch green beans washed ends removed
  • 1 cup baby spinach
  • 1 lemon washed
  • 1/2 head cauliflower florets
  • 1 tbsp olive oil
  • 30 grams Danish feta optional
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Instructions
 

  • Place cauliflower and greens in a steamer / steaming basket and steam until tender (approx 15 min)
  • Heat 1 teaspoon oil in a non-stick pan to medium
  • Season salmon with salt and pepper
  • Place salmon in pan skin side down and cook for 4-5 minutes, until about 70% cooked
  • Turn and cook for another 3-5 minutes, salmon should be slightly pink in the middle
  • Place steamed cauliflower and feta in a food processor and whip until it reaches a mash consistency
  • Serve salmon, cauliflower mash and greens seasoned with salt and pepper and a squeeze of fresh lemon
