Salmon and Cauli Mash
This recipe is simply protein, veggies and healthy fat, made with love. Oh and did I say delicious!!!
- 2 salmon filets
- 1 bunch broccolini washed ends removed
- 1 bunch green beans washed ends removed
- 1 lemon washed
- 1/2 head cauliflower florets
- 1 tbsp olive oil
- 30 grams Danish feta optional
- 1/2 tsp sea salt
- 1/2 tsp black pepper
Place cauliflower and greens in a steamer / steaming basket and steam until tender (approx 15 min)
Heat 1 teaspoon oil in a non-stick pan to medium
Season salmon with salt and pepper
Place salmon in pan skin side down and cook for 4-5 minutes, until about 70% cooked
Turn and cook for another 3-5 minutes, salmon should be slightly pink in the middle
Place steamed cauliflower and feta in a food processor and whip until it reaches a mash consistency
Serve salmon, cauliflower mash and greens seasoned with salt and pepper and a squeeze of fresh lemon
