Black Quinoa and Vegetable Salad

Raw vegetables coupled with black quinoa results in a nutritious and delicious salad. This salad is quick, easy and provides ample nourishment. You may enjoy this salad alone or as a side dish accompanying lamb, chicken or fish.

Ingredients
  

  • 2 cup Cooked black quinoa
  • 4 cups Baby spinach
  • 1 Fennel bulb
  • 1 Red capsicum
  • 1 Avocado
  • 1 to 2 Handfuls of parsely
  • 1 Lime large
  • 2 tbsp Olive oil
  • Sea salt and pepper

Instructions
 

  • Wash all vegetables well
  • Finley slice fennel and capsicum, add to spinach and quinoa
  • Dice avocado and to salad bowl
  • Roughly tear parsley according to taste and add to bowl
  • Dress the salad with fresh lime juice, olive oil, sea salt and pepper
