Raw Vegetable and Berry Salad

We all need to eat more raw fresh produce. This raw vegetable based salad does not only provide ample fibre, vitamins and disease protective nutrients it is also incredible crunchy and tasty. This is a balanced, bright, delicious Summer must.

  • 1 Broccolini stalks Chopped
  • 2 Celery stalks Chopped
  • 1 Large carrot Pealed and chopped
  • 1 Large purple carrot Pealed and chopped
  • 1/2 cup Blackberries or blueberries
  • 1/2 Avocado Diced
  • 2 tbsp Pumpkin seeds
  • 2 tbsp Pine nuts
  • Juice of 1 Lemon
  • Salt and pepper


  • Wash vegetables and berries well before use
  • Place all chopped ingredients and berries into a bowl and tossĀ (using a mandoline food slicer will make chopping a breeze)
  • Sprinkle pumpkin seeds and pine nuts over ingredients and toss
  • Dress the salad in fresh lemon juice and season with salt and pepper
