Teresa's Carrot Cake Muffin
This one minute muffin is quick, easy and super healthy! Perfect option for a mid morning snack or afternoon tea.
- 1/4 cup flaxseed meal
- 1/2 carrot, grated
- 1 tsp cinnamon
- 4 walnut halves
- 1 egg
- 1 tsp coconut oil or grass-fed organic butter
In a large mug crack the egg and beat
Add flaxseed meal, grated carrot, cinnamon, walnuts and mix well – ensure there are no lumps in the flaxseed mixture
Place mug into microwave, cook for 1 min (or until muffin is cooked through)
Remove muffin from mug and top with butter or coconut oil
Tip to check if the muffin is cooked through, press the top gentle, when the top springs back the muffin is cooked.
