Teresa's Carrot Cake Muffin

This one minute muffin is quick, easy and super healthy! Perfect option for a mid morning snack or afternoon tea.

  • 1/4 cup flaxseed meal
  • 1/2 carrot, grated
  • 1 tsp cinnamon
  • 4 walnut halves
  • 1 egg
  • 1 tsp coconut oil or grass-fed organic butter


  • In a large mug crack the egg and beat
  • Add flaxseed meal, grated carrot, cinnamon, walnuts and mix well – ensure there are no lumps in the flaxseed mixture
  • Place mug into microwave, cook for 1 min (or until muffin is cooked through)
  • Remove muffin from mug and top with butter or coconut oil 
  • Tip to check if the muffin is cooked through, press the top gentle, when the top springs back the muffin is cooked.
